Vegan Thousand Island Dressing

INGREDIENTS
½ cup raw cashews
1 cup plain unsweetened soy milk
2 tbsp white vinegar
5 tbsp ketchup
3 tbsp sweet relish
¾ tsp salt
½ tsp garlic powder
¼ tsp onion powder
INSTRUCTIONS
Place all ingredients in a small blender attachment. Blend until smooth and creamy, transfer to a small glass container with a lid. Keeps in the refrigerator for 3-5 days.
NOTES
*You can make this nut free by using hemp seeds instead or white beans. If using white beans then reduce the liquid in half.

This dressing is the BEST!!!!
It reminds me of my mother’s southern potato salad. Just add minced celery, onions, smidge of extra relish on warm steamed potatoes..BAM!!! Potato salad.

Maybe gf’s Mom would make homemade and she used lemon juice. This is really good, though I might use less salt and try the lemon in place of the vinegar.

Wow Crystal! Way to go on the weight loss! I just found KIki myself and loving all her recipes, read the starch solution, finished it in 2 days. Been on the starch solution now 4 days and have been dropping a pound a day so far!! Crazy!

This recipe is wonderful! I used it with my Big Mac potatoes.
Potatoes topped with cauliflower mushroom crumbles, lettuce,

If I were to substitute canned white beans, what would the amount be and how much liquid would I need to use.
