The dough was simple to make but a little finicky to work with (don’t worry it’s worth it and a little parchment paper is the key).

It was soft and sweet enough for me even without icing (don’t riot, I am not taking away your icing, haha).

INGREDIENTS:

Dough

3 1/2 cups – shredded mozzarella cheese

1 1/2 cups – almond flour

4 tbsp – cream cheese, softened

2 lg – eggs

1 tsp – baking powder

1 tsp – organic vanilla extract

1/2 cup – swerve sweetener, granulated

Filling

1/2 cup – swerve sweetener, granulated

1/2 cup – softened butter

1 1/2 tbsp – ground cinnamon

Icing

4 tbsp – cream cheese, softened

1 tsp – organic vanilla extract

1/2 cup – swerve sweetener, confectioners

DIRECTIONS:

– Add mozzarella to a microwave safe bowl and microwave for 30 sec – 1 minute, remove and stir. It should melt to resemble a ball of dough.

– Add remaining ingredients & stir well. Replace into microwave for additional 30 seconds to allow them to melt together.

– Remove dough and place onto parchment paper. Top with an additional sheet of parchment paper and roll out. Make sure not to roll it too thin – you don’t want any holes.

– In a separate bowl, mix together butter, sweetener, and cinnamon. Spread on top of the dough evenly.

– Next you will roll the dough (here is where it may feel tricky) it’s going to be a bit sticky so use the parchment paper to assist you.

– Lift one end of the parchment paper slightly to allow the dough to roll over itself, lay it back flat and then roll it again, repeat this until you’ve formed a large roll.

– Use a very sharp knife (I use a ceramic knife because they cut smooth and never dull) and cut into 10-12 even sized rolls.

– Place the rolls into a baking dish lined with parchment paper & place into the oven at 375 degrees for 15-20 minutes. This may vary from oven to oven (of course, so make sure to watch them).

– Remove them from the oven once they begin to brown & set them aside to cool for 5-10 minutes.

– Drizzle glaze over cooled rolls and serve warm!

** these heat up very well!

** I placed them into an airtight container and stored them in the fridge.

** if you chill the dough after you’ve topped it you can cut it into strips and then roll those up and place them into the pan. They fluff up better.

I wish when keto recipes are put on Pinterest or any where else that the break down of carbs and calories , fat are written down. If not the person has to put the whole recipe in their program to see if it’s worth making (carbs)

At first glance it looks like alot of carbs and would be if you are eating them all at once, but I did a quick research and calculation of the carbs and they actually come out to very low carbs per roll, at 12 rolls.

Just made these for breakfast. Followed the directions exactly. They spread out to fill the pan, so they were very flat. They tasted good. My husband gave them a?? up.

I have made these Keto cinnamon rolls twice now and have followed instructions exactly as written. I’m wondering if anyone else had trouble with the dough when in the oven melting rather than rising? They are still amazing!

And just want to say to everyone complaining about nutritional values – try being a little more considerate! I am sure 99% of you have no idea just how much work goes into making ONE recipe and then how hard it is to share with the world, only for people to be so rude.

Mine got flat and there was melted butter all inside the pan…what did I do wrong!?
I was able to cut 12 with my roll. I used a glass baking dish with parchment paper lining it. I placed 9 rolls inside but with space between them to give them room to “grow” should I not have done that? I’ve never even made regular cinnamon rolls before lol!

I have made them twice, first on baking sheet and second time on muffin top pan. I will try sending a photo. They turned out well and very yummy both times. Thank you for explaining the process so well.

I never understand the need to someone to be so rude… if you want nutrition facts enter the ingredients yourself. Btw these were delicious! My husband is a diabetic and we appreciate any recipes that have been tweaked so he can enjoy treats again! Thank you for sharing!

These are the absolute best!!! My hubby is obsessed. Just a little tip, I froze the rolled up “log” for about 30 minutes. This made the rolls cut nicely and made my rolls puff up rather than melt as some comments indicated.
